Fish Recipes
Herbed Fish (Add to Favorites)

Use any firm, mild white fish and add some french fries and a salad for a quick, healthy dinner.....

Ingredients:
1 lb. fish fillets, about 1/2 inch thick
2 tbsp. olive oil or cooking oil
1/2 cup baking mix, such as Bisquick
1/4 cup garlic/herb flavored bread crumbs
1 tbsp. chopped fresh basil leaves (or 1/2 tsp. dried)
1/2 tsp. salt
1/8 tsp. black pepper
1 egg
Lemon wedges
Tartar sauce

Directions:
Cut fish into serving-size pieces. In large heavy skillet, heat oil over medium heat. On a small plate, mix baking mix, bread crumbs, basil, salt and pepper with fork. In a small shallow dish, beat egg. Dip fish into egg, then coat with baking mixture. Reduce skillet heat to medium-low. Cook fish in oil 8 to 10 minutes, turning once midway, until it flakes easily and is brown on both sides. Serve with lemon wedges and tartar sauce. Serves 4.
Note: Tartar sauce can be kicked up by adding 2 tbsp. basil pesto to 1/2 cup.
